RECIPE: Moriah Chocolate Mint Cookies

We enjoyed an afternoon together in the kitchen recently, making cookies and pizza. It’s a nice way to warm up the house when it is chilly outside. The pizza was just “thrown together” as dear hubby would say. He’s a super cook, and put this tasty variety in the oven shortly after I finished making cookies (recipe below). For the curious, the pizza was pastrami (beef), green pepper and mushroom.

1 cup butter, softened

¾ cup packed brown sugar

½ cup granulated sugar

1 egg

1 teaspoon vanilla

2 cups all-purpose flour

¼ cup unsweetened cocoa

1 teaspoon baking soda

½ teaspoon salt

1 package (4.67 oz) chocolate sandwich (Andes) mints, coarsely chopped

1 cup vanilla baking chips



Heat oven to 375 degrees (F). In large mixing bowl, combine butter, sugars, egg and vanilla. Beat at medium speed of electric mixer until light and fluffy. Add flour, cocoa, baking soda and salt. Beat at low speed until soft dough forms. Stir in mints and chips. Drop dough by heaping teaspoons 2 inches apart onto ungreased cookie sheets. Bake for 8 to 10 minutes or until set. (8 minutes makes them nice and gooey!) Cool completely before storing. Praise YHWH for the yummy treat! Makes approx. 3 dozen cookies.
