Snowed-In BBQ Brisket
There’s no need to postpone delicious barbecue meals until warmer weather. With a few tips, like those in this recipe, you can enjoy a nice brisket without an outdoor smoker or grill!
3 to 5 lb trim brisket
2 12-oz cans dark beer of your choice
2 T. Weber “bold chipotle” seasoning
4 T. Stubb’s mesquite liquid smoke
1 T. salt
1 T. course ground pepper
2-4 cups barbecue sauce of your choice
Place all ingredients except BBQ sauce in a large pot. Add water until meat is covered. Boil between 2-3 hours at a low boil. Add water as needed to keep meat covered. Remove and chill meat overnight in refrigerator. Once chilled, slice meat cross-grained in ¼ inch thickness, but not completely through. Place in shallow pan and smother with BBQ sauce working it inside slices of meat. Cover tightly with foil and bake in oven at 250 degrees for 1 1/2 to 2 hours. In the last 15-20 minutes, raise temperature to 350 and remove foil.
